Yesterday was Kyle’s birthday and he turned 24! I kidded him because I almost had to buy two packs of candles because all i saw were 20 packs. Then i saw the 24 pack…next year, my friend, you can join the ‘two-pack’ candle club :)
the cake I made is definitely one of my favorites…it’s a chocolate cake with chocolate icing, what’s not to like, right?
Best Devil’s Food Cake
1 package devils food cake mix
1/2 cup vegetable oil
1/2 cup water
1 cup vanilla yogurt
3 large eggs
Preheat the oven to 325. Grease and flour 3 8 inch pans. In a large mixing bowl, beat the cake mix, oil, water, and yogurt until blended. Add the eggs one at a time-mix for one minute after each egg. Scrape the sides and mix for 5 minutes on medium high. Add the vanilla. Bake for 15-20 minutes, or until the cake pulls away from the sides of the pan. Let it cool in the pan for 25 minutes.
Best Chocolate Icing
4 cups (1 box) powdered sugar
3/4 cup cocoa
1/2 cup butter softened
1/2 cup evaporate milk (or half and half)
1 tsp vanilla
Sift together the cocoa and sugar. Cream the butter. Alternately add the milk and dry ingredients. Add the vanilla last, then beat for 5 minutes. Frost in between and on top of the layers.
