rollin’ down the {provo} river

isn’t it pretty? this picture is very deceiving. it was absolutely freezing. when you touched the water it felt like little needles going into your skin. there’s no swimming in this river (for me at least), just floating. but i’m used to water being like bath water in alabama. i’m afraid if you got your whole body wet you might contract hypothermia in the provo river.  what can you expect though, it’s melted snow! it’s such a beautiful ride with rapids, bridges, and cold, cold water!

mitchell enjoyed his 75 cent water gun, especially when he aimed right and got us all wet.

are we there yet?

font le roy (mitchell’s nickname) hiked up his first mountain while he was here. it was a beautiful morning and we got great exercise hiking up. we thought our calves were gonna fall off once we got to the top of the “y”. after, we had kneaders for breakfast. if you’re ever in provo, you have to go for breakfast and get their famous all you can eat french toast. yum!

it’s tradition when you up on y mountain, you have to lay upside down and look back. they weren’t too sure about it!

120,000 water balloons

we helped beat a record! byu hosted the biggest water balloon fight ever. it was so much fun!

i got my first picture with cosmo…i am now a true byu student.

we were at the very front of the line and we got soaked!

i also became “famous” while at the water balloon fight…na, not really, but check this out…i spy becca and abby {and james dalton, who we think is cosmo}.

smelling like a donut

for our sunday night baking party we made donuts or “beignets”. it started out with just 4 people (me, becca, korbin, and josh)…once the smell of fried donuts leaked out of our apartment, we had about 15 more come and join us! you should make some donuts, but beware you’re gonna smell like donut too! i didn’t mind. i love watching the donuts pop up from the bottom of the oil in the pan and that’s just what i did. I was over those donuts and hot, popping oil the whole night. I had nothing to complain about, i was in my heaven.

after rolling those donuts out with flour… we got into a flour fight

and then we fried and fried and fried.

and covered them with cinnamon sugar  (my favorite honey) and powdered sugar

and josh even spelled his name with donuts!

you wanna make some donuts and smell like one too? here’s how…

you’ll need

2 1/4 tsp yeast (or one packet)

1 1/2 cup warm water

1/2 cup sugar

1 tsp salt

2 eggs

1 cup evaporated milk

7 cups of flour

1/4 cup shortening

vegetable oil for frying

confectioners sugar for rolling

cinnamon sugar for rolling

In a large bowl, dissolve yeast with water. Add 1/2 cup sugar, salt, eggs, and evaporated milk.  Blend well. (I used Lucille, my mixer, with my bread hook).  Mix in 4 cups of flour and beat until smooth.  Add the shortening and then the remaining 3 cups of flour.  Cover and chill to let rise.  (You can let it chill up to 24 hours)

{mine was only in the fridge for about an hour and it was perfect}

Roll out the dough 1/2 inch thick (make sure you flour your surface so it doesn’t stick).  Cut into squares or circles. You can make them into donuts, letters, shapes, you name it. Fry in 36o degree oil. Let them lightly brown. Toss in either confectioners sugar or cinnamon sugar. Serve warm. Probably makes 100 small 1 inch donuts!

Lastly, enjoy smelling like a fried donut :)

i’m wiping the slobber off, not the love!

Mitchell Bess can make me laugh like no other! He said that after I gave him a kiss on the cheek and told him not to wipe it off.  I am so glad he got to come spend a few days here in Utah visiting me and Kyle! We did so many fun things! On Friday we went to the rope swing in Mona. It was so crowded, which was kind of a bummer, but we each got to go off a few times!

cowboy boots, bulls, and SO much fun {part 1}

Spanish Fork Rodeo was so much FUN. I can positively say that it was one of my top 3 most favorite nights while living in Provo, Utah. It was so much fun to dress up and play “cowgirl” for a night!

have i ever told you she is the best friend i could ever ask for? who know’s where i would be without becca johnson : )

that was me when i was in school. oh yes. i wanted to be the one that graded those papers and got to write on the chalkboard.

that’s 28 children’s books i got at the library. my arms almost broke off carrying them to my car. i enjoyed every minute of it. i’m proud to say that my time consist of reading children’s books.

i had my last children’s literature class tonight and got teary eyed at the end. my teacher {mrs. julie} was the absolute best. i wanted to just go give her a hug and thank her at the end. i wish i would have. i would give anything to be the teacher i know she was. i learned so much in this class and my notebook is my prized possession. she gave us things that we will actually use. mrs julie treated us like her kids. she would always say “because i’m your mother…”. she has been the best teacher i have had at BYU. I wish i could do all over again!

all  in all i can’t wait to be a teacher.
