on monday, i got a text message in my art history class from carter that said “i’ll see you on wednesday”… i thought surely he had sent the message to me on accident and meant to send it to one of his friends down at the beach. then he told me he said “i’m as serious as will sconyers fishin”…i knew he was serious then : )
he came into town on wednesday and will be here til sunday afternoon : )
well on tuesday night i started prepping carter’s favorite meal by going to the grocery store.
we had bbq meatloaf, hasbrown casserole, frog’s eye salad, green beans, and banana pudding! yummmm.
this bbq meatloaf is one of my favorite meals and it is so easy! here’s the recipe from paula deen, who else???
1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, slightly beaten
salt and pepper
2 (8 ounce cans tomato sauce)—i usually use a little more because i like the sauce with the potatoes
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons mustard
2 tablespoons wocestershire sauce
1/2 cup water to thin the sauce if necesssary
Preheat the oven to 350 degrees. In a large bowl, mix together the ground beef, bread crumbs, onion, egg, salt & pepper, and about half a cup of the tomato sauce (i’m still slightly grossed out with touching meat so i put two plastic bags on my hand and mixed it all up : )) Form this mixture into a loaf. In another bowl mix up the rest of the ingredients and the remaining tomato sauce to make the bbq sauce. Pour over the loaf and cook for about an hour, basting every now and then.
we had quite a crowd…carter, kyle, ryan depew, elysse, mekelle, rebecca, and me! it was lots of fun!
