i’ve been in a breakfast for dinner kind of mood a lot lately.
the menu tonight:
homemade blueberry muffins
which one would you rather have?? i’d pick the one of the left, for sure.
2 cups all-purpose flour
1 tablespoon baking powder
2 large eggs
1 cup sugar
4 tablespoons melted butter
1 1/4 cup sour cream
1 1/2 cups blueberries (i used fresh, the recipe calls for frozen)
Preheat oven to 350 degrees.
Combine all the dry ingredients and whisk together in a medium bowl. In another bowl beat the two eggs well with a fork. Add the sugar. Add the melted butter in 2 additions, stirring after each time. Add the sour cream in 2 additions, and stir well. Add the blueberries to the dry ingredients (i put some sugar on them before i put them in) and mix well. Then add the sour cream mixture to the dry ingredients and fold in. Do not over stir. It is ok to have some lumps of flour.
Bake for about 25 minutes. Let them cool for 5 minutes. Mix up some cinnamon sugar and melt a few tablespoons of butter. Dip the tops in the butter then into the cinnamon sugar. Don’t skip this step : )
