today has been a good day of long classes, getting things done so i can check them off my to-do list, and checking the mail to find a package from home {with general conference tickets : )} and a letter from the oh so famous peter fife!

Happy Birthday Nana!!!

Annie Durham Mitchell…i love her and i love her name! Happy Birthday Nana! Wish I was there to celebrate with you! People tell me I’m just like you…and I love that. Thank you for always being so sweet, calling me, and helping me count down the days ’til I’m back in Alabama (and your goodie plate will be filled to the brim)!

Baby Carrot Cake

Yaya called me about a week ago and asked me to make a cake for Ryan Depew’s birthday…of course, I was happy to do it! She told me that his favorite was Carrot Cake, so that’s what I made. I love this recipe because it is so darn easy!

here’s what you’ll need for the cake.

here’s what ya need for the cream cheese icing

For the Cake:

2 cups self rising flour (so easy!)

2 teaspoons ground cinnamon

2 cups sugar

2 (4 ounce) jars baby carrot food

4 eggs

1 1/2 cups vegetable oil

Put all of it in Lucille (the mixer)

and mix it all up! Put it in 4 greased 9″ round cake pans (i lined the bottoms with waxed paper). Bake at 325 for about 20 minutes! Watch them because mine got done much faster!

For the icing:

1 (8 ounce) block of cream cheese, softened

1/2 a stick of butter, softened

vanilla

a pound of powdered sugar

Use lucille again and mix it all up (with the whisk beater)!

Enjoy!

Fried Chicken Salad

my favorite salad

this is a copy cat from a restaurant that me, mom, and nana ate in montgomery on the way to Mekelle’s wedding shower! Here’s how I do it…

first make the dressing

use a mason jar (i love mason jars)…add

1/2 cup of sugar ( i use a little less, cause momma said so)

1 tsp. salt

2/3 cup of olive oil

1/3 cup apple cider vinegar

a few squirts of mustard

1 tablespoon of poppy seeds

1/2 of a finely minced onion

shake it all up

for the salad…

lettuce

mandarin oranges

sliced strawberries

toasted walnuts ( in a dish, put a few tablespoons of butter + some greek seasoning and microwave for few minutes)

craisins

fried chicken strips (from the freezer)

poppy seed dresssing

spring fever

When ever I used to see daffodils at home, I knew spring time was in Alabama to stay. I love them and wish I could see some here. I saw a bunch of daffodils at the grocery store and my gut feeling was to get them so I could enjoy them, but I didn’t and I really wish I did. The weather has been gorgeous in Provo, I just keep praying for no more SNOW!

new favorite song {i’m just a little obsessed}. this video and song reminds me of brinson, georgia. Brinson georgia is one of my favorite places on earth. It almost seems like time stops there. I love going there and visiting Nana and Papa, riding bikes (and dirt bikes), swimming, enjoying the pecan orchard, playing pool, playing the piano with nana, cooking, sleeping in the twin room, and the smell of their house. CAN’T WAIT TO GO BACK!!!
